Microsoft has cleverly hidden the "View tab" that lets you set the display to Formulas in Excel 5.0.  Instead of looking under the View menu as you would expect, choose the Tools menu, then Options...  Now you can click on the View tab to get the dialog box shown below.  Select Formulas under Window Options to display formulas instead of values.
